The edible part of Water Caltrop is the fruit of Trapa spp. The leaves of Water Caltrop are arranged symmetrically on the water surface. Each petiole has a swollen part that helps the plant to keep afloat. A slender underwater stem connects the floating part of the plant to its underground roots for anchorage. It also has adventitious roots growing from the stem to absorb nutrients from the water.
